Age of the vines: more than 50 years
“Petits Noizons” on hard limestone rocks, the vines face due south. "Chanlins Haut" on a soil of coarse limestone and marl, orientation East - South East.
Harvest: Manual in perforated boxes of 20 kg.
Yield: 35hl/ha
Vinification: Sorting of the harvest then complete destemming of the bunches pre-fermentation cold maceration for 5 days at
12°c, fermentation for 12 days with pumping over and some punching down to improve the extraction then post fermentation for 3 days at 25-30°C.
Ageing: 80% put in barrels with 40% new barrels and 40% barrels of one or two wines and 20% in stainless steel vats for 12 months. Assembly of the tank and the barrels for bottling.
Food and Wine Pairing: Fillet of beef, game or mature cheeses.
